Wicked Good Chili

SERVINGS: 6 - 8
INGREDIENTS:
2 lbs Bison or favorite ground meat
4 small Filet Mignon or favorite steak (cubed)
2 cans Crushed tomatoes (28 oz each)
1 can Diced tomatoes (14–16 oz)
2 Green peppers
1 Large onion
2 Tbsp Butter
¼ cup Low Sodium Soy Sauce
2 pouches Chili Seasoning (McCormick works great)
12 oz Beer (Coors or similar)
Dry steak seasoning (your favorite blend)
Salt & Pepper to taste
Optional: Pickled jalapeños, Lawry’s Garlic Salt
Optional: Beans (cooked separately and seasoned with Lawry’s Garlic Salt)
INSTRUCTIONS:
Sauté onions in butter with a sprinkle of Lawry’s Garlic Salt until slightly browned or translucent.
Add all three cans of tomatoes directly into the pot.
In a frying pan:
Brown bison with chili seasoning and beer. Add to the chili pot.
Add chopped green peppers to the pot.
Same pan:
Sear steak bites until medium rare (they’ll finish cooking in the pot).
Add steak bites, jalapeños, and soy sauce to the chili pot.
Final simmer:
Cover and cook on low for 45–60 minutes until bubbling.
Taste and adjust salt/pepper if needed.
Simmer an additional 30 minutes to let flavors fully blend.
