Infamous Tex-Mex Bison Burgers

INGREDIENTS:

  • 12 slices smoked bacon 4 slices finely chopped and 8 left whole

  • 2 lbs  Bison

  • Lawry’s Garlic Salt

  • 2 tbs pureed chipotle

  • 2 tbs Worcestershire sauce

  • Salt and pepper

  • Salted butter for drizzling

  • 3 tbs butter

  • 1 lb bag - Velveeta Melting Cheese

  • 1 14 oz can Rotel

  • Burger Buns

  • Fritos

  • 1/2 Chopped onion

  • chopped cilantro (in a separate bowl, for people to sprinkle on burger if desired)

  • Pickled jalapeno (in a separate bowl, for people to add to burger if desired)

INSTRUCTIONS:

  • Preheat cast iron pan

  • Cook 12 slices of bacon in cast Iron pan, until nice and crispy. Set aside. Drain grease.

  • In a medium bowl, combine beef, chopped bacon, onion, Lawry’s, chipotle puree, and Worcestershire sauce. Season with salt and pepper to taste. Divide the mixture into 4 even balls and gently mold into patties. Drizzle with salted butter and cook in cast iron pan

  • Meanwhile, make the queso sauce; Melt butter over medium heat in a saucepan. Whisk in the Velveeta melting cheese. Lastly, stir in the tomatoes and onions. Reduce heat to low while everything comes together.

  • Layer burger rolls with grilled patties, queso sauce, corn chips, and pickled jalapenos.
